Hello again!

My name is Andres Hinojosa, the founder of Dinner with a Chef. We are a Personal Chef company located in San Diego, CA.

Today I wanted to talk about the products that us Chefs use in creating our menus, and inspire us to create new dishes. I believe most Chefs want to use the best quality products that we can find and source. Not only do we want to source them, but we also want to be in touch with the farmers and artisans that are producing the products.

However, so many of the large restaurant and the hotel chains force us to source the products from their large account purveyors! They almost always insist on looking only at the bottom line.

We want to use the best ingredients possible, but I feel like they sometimes straight tie up our hands! It is so frustrating to want to do your best work with the best products, but are just plain not able to do it. It is not just about our customers having a much a better experience with amazingly fresh food from the best possible ingredients. But, I feel like we also have a moral obligation as Chefs to source locally and not from the big industrial farms that just produce crap!

I understand the frustration that many Chefs feel, I was there! I used to work in a hotel that was in bed with their purveyors. They received so many kickbacks, that the purveyors could literally sometimes send us whatever they wanted without even blinking an eye. It was quite honestly disgusting!

Now as a Personal Chef, I have the freedom to source from the best of the best. I have the freedom of purchasing the best products from anywhere that my heart desires. This has not only giving me the ability to be creative with my food, allowing the seasons to dictate what goes on the plate. But, it gives me a profound sense of fulfillment to support the local farmer. It has also, to be very honest with you, made me a better Chef. It has transformed me in the way I think about food, health, and nutrition. I could never imagine going back to having to use those big industrial purveyors!
